Recipe - Banana Loaf

Yes! We Have No Bananas

I’m sure many of you do exactly the same as me – overestimate the number of bananas I can eat. So I often end up with two or three of them festering away in the bottom of the fruit bowl. What to do with them? Well I give them to our Lisa and she makes delicious banana loafs out of them. Baking is well beyond my capabilities, but a few of you more creative people might like to give it a go yourself. So here’s Lisa’s recipe for…..

BANANA LOAF

Ingredients:

150g caster sugar

125g butter

190g self-raising flour

60ml milk

1 egg

3 VERY ripe bananas, mashed

1 ½ teaspoons vanilla essence


Method:

Grease and line a 2lb loaf tin.

Melt butter, vanilla essence and caster sugar over a medium heat. Remove from heat and add the mashed bananas.

Add the egg and stir in the flour and milk.

Pour in to the loaf tin and sprinkle the demerara sugar on top.

Bake in an oven at 170ᵒC (150ᵒC fan) or gas mark 3 for 35 minutes. Insert a knife in to the loaf and if it comes out clean it’s ready. If it’s sticky then add a few minutes to the cooking and check again. Continue to add minutes until the loaf is cooked. Enjoy!
